Grilled Sweet Corn with Garlic Butter

Grilled Sweet Corn

Yield: 12 servings

Ingredients

  • 12 ears sweet corn
  • 2 tablespoons butter
  • 3 tablespoons minced garlic
  • Zest from 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat a grill to low heat.
  2. Remove the silks from the ears of corn, but do not remove the husks.
  3. Soak in water for 15 minutes so the husks don't burn.
  4. Grill one-half of the corn with the husks pulled up for a steamed flavor and one-half with the husks pulled down for a nice grilled flavor and cook for 20 minutes.
  5. While the corn cooks, make garlic butter by combining butter with garlic, lemon zest, salt and pepper to taste.
  6. When the corn is done, brush with the garlic butter.
