Tamale Casserole

This will be one of the easiest tamale casseroles you will ever make.

Yield: 13 x 9 inch casserole

Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 1 can pinto beans, rinsed and drained
  • 1 can whole kernel corn, drained
  • 1/3 cup water
  • 1 box corn muffin mix
  • 1 can red or green enchilada sauce
  • 1 teaspoon Mexican oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Mexican style cheese, grated
  • Garnishes: diced red onion, diced tomato, sour cream, lime wedge

Instructions

  1. Heat oven to 350 degrees F. Spray a 13 x 9 inch baking dish with nonstick spray.
  2. Sauté ground beef and onion in a large skillet until ground beef is cooked through. Drain excess grease.
  3. In a large bowl, combine all ingredients except cheese and garnishes.
  4. Add to the prepared baking dish. Sprinkle the cheese over the top.
  5. Bake for 30 to 35 minutes.
  6. Garnish as desired.
