Baked Barbecued Meatballs in Sauce
My mother-in-law gave me this recipe just after we were married and I still make this; a good company dish.
Yield: 4 servings
Ingredients
Meatballs
- 1 pound ground beef
- 1 small onion, finely diced
- 1/4 cup rolled oats
- 2 tablespoons evaporated milk
- 1/2 teaspoon red chili flakes
- 1 clove garlic, minced
- Salt and pepper to taste
Sauce
- 1 small onion, diced
- 1 cup ketchup
- 2 tablespoons vinegar
- 3/4 cup water
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1 teaspoon dry mustard
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire
- Salt and pepper to taste
Instructions
Meatballs
- Combine all ingredients together and form into small balls. Brown in skillet, drain on paper towel.
- Place in a lasagna-size baking dish.
Sauce
- Combine all ingredients together in a medium saucepan. Bring to boil; boil for 5 minutes. Pour over meatballs.
- Bake uncovered in 350 degrees F oven for 1 hour.
- Serve with hot rice or noodles and a green salad.
Notes
Recipe can be doubled.
