Almond Oven-Fried Chicken
Yield: 6 servings
Ingredients
- 3 chicken breasts, boned, skinned and halved
- 1 cup all-purpose flour
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 teaspoons paprika
- 2 eggs, beaten
- 3 tablespoons milk
- 1 1/2 cups almonds, blanched, finely chopped
- 2 tablespoons butter
- 2 tablespoons fat
Instructions
- Heat oven to 400 degrees F.
- Coat chicken with dry ingredients. Dip in mixture of beaten eggs and milk. Roll in almonds. Let stand for 10 minutes.
- Melt butter and fat in shallow baking pan. Place chicken, skin side down, in pan. Bake for 30 minutes.
- Turn; bake until tender, about 30 minutes.
