3 chicken breasts, boned, skinned and halved
1 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons paprika
2 eggs, beaten
3 tablespoons milk
1 1/2 cups almonds, blanched, finely chopped
2 tablespoons butter
2 tablespoons fat
Heat oven to 400 degrees F.
Coat chicken with dry ingredients. Dip in mixture of beaten eggs and milk. Roll in almonds. Let stand for 10 minutes.
Melt butter and fat in shallow baking pan. Place chicken, skin side down, in pan. Bake for 30 minutes.
Turn; bake until tender, about 30 minutes.
