Custardy Chicken Bake

Ingredients

  • 6 chicken breast halves
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups Bisquick mix or Biscuit Baking Mix
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 3 eggs

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 inch baking dish.
  2. Heat oil in skillet and fry chicken until light and golden brown.
  3. Place chicken, skin side up in dish. Sprinkle with 1/2 teaspoon salt and pepper.
  4. Beat baking mix, tarragon, 1/2 teaspoon salt, milk and eggs with hand mixer until smooth.
  5. Pour over chicken and bake until golden brown, about 55 to 60 minutes.
