Melt in Your Mouth Chicken

Ingredients

  • 1 (3 pound) chicken, boiled until tender
  • 1 can cream of chicken soup
  • 2 cups chicken broth or water in which chicken was cooked
  • 1 stick (1/2 cup) melted butter
  • 1 cup buttermilk
  • 1 cup self-rising flour*
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Cube chicken and place in greased casserole dish.
  2. Combine the cream of chicken soup and the chicken broth and pour over chicken.
  3. Combine butter, buttermilk, flour, salt and pepper and pour over the above to make crust.
  4. Bake at 425 degrees F for 30 minutes.

Notes

To make your own self-rising flour, measure the desired amount of flour into a separate container. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt. Use a whisk or fork to blend the mixture thoroughly before you use it in a recipe.
