Chicken Breasts with Chipotle Orange Sauce
Ingredients
- 6 chicken breasts
- 1 teaspoon salt, divided
- 1/4 cup butter
- 2 1/2 tablespoons all-purpose flour
- 1 tablespoon sugar
- 1/4 cup cumin
- 1/8 teaspoon allspice
- 2 canned chipotle chiles, chopped
- 3/4 cup orange juice
- 1 1/2 cups hot cooked rice
- 1/3 cup cilantro, for garnish
- 1 orange slice for garnish
Instructions
- Sprinkle chicken breasts with 1/2 teaspoon salt.
- Heat butter in a skillet and brown the chicken. Remove.
- Add flour, sugar, spices, chiles and remaining teaspoon salt to drippings in skillet and stir until it forms a paste.
- Gradually stir in orange juice. Cook this mixture, stirring constantly, until mixture thickens and comes to boil.
- Add the chicken breasts and cover. Simmer over low heat until chicken is tender, about 30-40 minutes.
- Remove chicken to serving platter.
- Serve with hot cooked rice and sauce.
- Garnish with orange slices and cilantro.
