Peanut-Cheese Loaf

Ingredients

  • 2/3 cup cooked oatmeal or rice
  • 1/4 cup chopped green bell pepper
  • 3 tablespoons minced onion
  • 1 teaspoon salt
  • 2 teaspoons lemon juice
  • 1 cup chopped salted peanuts
  • 2/3 cup fine crumbs
  • 1/4 pound cheese, grated (about 1 cup)
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Combine all ingredients. Put mixture into a greased loaf pan and bake at 350 degrees F for about 1 hour.
  2. Serve hot with mushroom or tomato sauce.
