Meat Loaf Recipes
Hi Ho Meat Loaf
1 1/2 cups crushed Hi Ho Crackers
1/4 cup minced onion
1/4 cup minced green bell pepper
2 eggs, slightly beaten
1 1/2 pounds lean ground beef
1/2 pound pork sausage
2 tablespoons grated horseradish
1 tablespoon salt
1/4 cup milk
1/2 cup catsup
Heat oven to 350 degrees F. Grease a 9 x 5-inch loaf pan. Crush Hi Ho Crackers
medium-fine by rolling on sheet of wax paper with rolling pin.
In medium-size bowl, combine cracker crumbs, onion, green pepper, eggs, beef,
sausage, horseradish, salt, milk and 1/4 cup catsup. Mix well and press into
greased loaf pan. Spread top with remaining 1/4 cup catsup. Bake for 1 hour.
Remove to heated platter, slice and serve hot; or chill, slice and serve
cold.
Yields 6 to 8 servings.
