Baked Doves with Gravy
This recipe makes a wonderful gravy.
Yield: 8 to 10 servings
Ingredients
- 18 to 22 doves
- Salt and pepper, to taste
- All-purpose flour
- 1/2 cup vegetable oil
- 1/2 cup chopped scallions
- 1 1/2 cups water
- 1/2 cup sherry
- 1/2 cup chopped parsley
Instructions
- Salt, pepper and flour doves. Brown in oil in Dutch oven at 400 degrees F. This takes about 1 hour.
- Add scallions, water, sherry and parsley. Cover and reduce heat to 350 degrees F.
- Cook until tender, about 2 to 2 1/2 hours.
- Serve with wild rice.
