Baked Doves with Gravy

This recipe makes a wonderful gravy.

Yield: 8 to 10 servings

Ingredients

  • 18 to 22 doves
  • Salt and pepper, to taste
  • All-purpose flour
  • 1/2 cup vegetable oil
  • 1/2 cup chopped scallions
  • 1 1/2 cups water
  • 1/2 cup sherry
  • 1/2 cup chopped parsley

Instructions

  1. Salt, pepper and flour doves. Brown in oil in Dutch oven at 400 degrees F. This takes about 1 hour.
  2. Add scallions, water, sherry and parsley. Cover and reduce heat to 350 degrees F.
  3. Cook until tender, about 2 to 2 1/2 hours.
  4. Serve with wild rice.
