Lime Duck
Serves 2 to 4.
Ingredients
- 2 ducks
- 4 strips bacon
- 1 cup fresh lime juice
- 1/4 to 1/2 cup orange juice
Instructions
- Marinate ducks in lime juice for 2 hours.
- Place ducks and marinade in Dutch oven, salt and pepper lightly, and bake at 325 degrees F for 2 1/2 to 3 hours, until duck almost falls off bone. Baste with orange juice when ducks become dry (about the last hour of cooking).
- About 30 minutes before serving, cover each duck with 2 strips of bacon.
