Orange Coconut Squares

Yield: about 2 dozen squares

Ingredients

Base

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour

Filling

  • 1 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup coconut
  • 1 cup chopped pecans (optional)
  • 1 teaspoon vanilla extract

Icing

  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • Grated rind of 1 lemon

Instructions

  1. Combine Base ingredients and spread over the bottom of a buttered 9 x 13 inch glass baking pan. Bake at 350 degrees F for 15 minutes.
  2. For the Filling, combine brown sugar, flour, baking powder and salt; add to beaten eggs, coconut, nuts and vanilla extract. Spread over hot bottom layer. Return to oven and bake 15 minutes more at 350 degrees F.
  3. Combine Icing ingredients and ice while hot. Cool; cut into squares.
