Nutella Santa Snack

16 gingersnap cookies (store-bought or homemade,
    approximately 2 inches in diameter)
1/2 cup Nutella
2 pieces crystallized ginger, coarsely chopped

Spread 8 gingersnap cookies with 1 tablespoon Nutella each and top with a sprinkling of ginger. Top with remaining cookies to form sandwich.
