Autumn Cheesecake
Ingredients
Crust
- 1 cup Graham cracker crumbs
- 1/2 cup finely chopped pecans
- 3 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup margarine, melted
Filling
- 2 (8 ounce) packages cream cheese, softened
- 1/2 teaspoon vanilla extract
- 2 eggs
Topping
- 4 cups thin peeled apple slices
- 1/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 3/4 cup chopped pecans
Instructions
- Mix ingredients for crust and press into bottom of Springform Pan.
- Bake for 10 minutes at 325 degrees F.
- Beat cream cheese, sugar and vanilla extract at medium speed with electric mixer until well blended. Add eggs one at a time, mixing at low speed after each addition until well blended; pour over crust.
- Toss apples combined with sugar and cinnamon, spoon apple mixture over cream cheese layer, sprinkle with pecans.
- Bake for 1 hour and 10 minutes or until center is set.
- Run knife around edge of pan to loosen cake.
- Refrigerate for 4 hours or overnight.
