Tortilla Bites
Yield: 16 servings
Ingredients
- 4 (8 inch) fat-free flour tortillas, cut into quarters
- 1 medium onion, grated
- 1 (16 ounce) can black beans, drained
- 1 (8 ounce) jar chunky salsa
- Fat-free sour cream (optional)
- Chopped fresh cilantro (optional)
Instructions
- Heat the oven to 350 degrees F.
- Spray 16 muffin cups with nonstick cooking spray. Fit 1 tortilla quarter in each muffin cup.
- Layer the onion, black beans and salsa in the prepared muffin cups.
- Bake for 8 to 10 minutes or until heated through.
- Garnish with sour cream and cilantro.
- Serve immediately.
