Tortilla Bites

Ingredients

  • 4 (8 inch) fat-free flour tortillas, cut into quarters
  • 1 medium onion, grated
  • 1 (16 ounce) can black beans, drained
  • 1 (8 ounce) jar chunky salsa
  • Fat-free sour cream (optional)
  • Chopped fresh cilantro (optional)

Instructions

  1. Heat the oven to 350 degrees F.
  2. Spray 16 muffin cups with nonstick cooking spray. Fit 1 tortilla quarter in each muffin cup.
  3. Layer the onion, black beans and salsa in the prepared muffin cups.
  4. Bake for 8 to 10 minutes or until heated through.
  5. Garnish with sour cream and cilantro.
  6. Serve immediately.
