Yield: 4 large servings

Ingredients

  • 8 tablespoons butter
  • 1 cup heavy cream
  • 12 tablespoons Parmesan cheese
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 cup finely diced canned jalapeno peppers
  • 3 tablespoons minced garlic in olive oil
  • 10 ounces roasted chicken chunks

Instructions

  1. Combine butter, cream, Parmesan cheese, flour and salt and pepper and heat very slowly until thickened.
  2. Add the jalapenos, garlic and roasted chicken and heat through.
  3. Serve over penne pasta.
