Cilantro Pesto

Use this as you would traditional pesto — with pasta or on grilled chicken or fish.

Yield: about 1 1/4 cups

Ingredients

• 1 1/2 cups firmly packed fresh cilantro
• 1/2 cup firmly packed fresh parsley
• 1/2 cup grated Parmesan cheese
• 1/2 cup vegetable oil
• 1/4 teaspoon salt
• 3 cloves garlic
• 1/4 cup pine nuts

Instructions

1. Place all ingredients in a blender container. Cover and process until well blended.
