Luscious Lemonade Cream Cheese Pie

Ingredients

Pie Crust*

  • 2 2/3 cups Graham cracker crumbs
  • 1/3 cup granulated sugar
  • 2/3 cup butter, melted

Filling

  • 1 (5 ounce) can evaporated milk
  • 1 (3.4 ounce) box instant lemon pudding mix
  • 2 (8 ounce) packages cream cheese
  • 3/4 cup frozen lemonade concentrate (regular or pink)

Instructions

  1. Heat oven to 350 degrees F.

Pie Crust

  1. In a medium mixing bowl, combined all ingredients and whisk together until well combined.
  2. Press Graham cracker crumbs into deep dish pie dish and make sure to go up the sides.
  3. Bake for 10 to 12 minutes. Remove from oven and let cool before adding filling.

Filling

  1. In a small mixing bowl, combined milk and pudding mix.
  2. Beat on low speed for 2 minutes (mixture will be thick).
  3. In a medium mixing bowl, beat cream cheese until light and fluffy, about 3 minutes.
  4. Gradually beat in lemonade concentrate.
  5. Gradually beat in pudding mixture.
  6. Pour mixture into Graham cracker crust.
  7. Cover and refrigerate for at least 4 hours before serving.

* or 1 (9 inch) Graham cracker crust
