Down Home Apple Cobbler

Ingredients

Topping

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 1/2 cups rolled oats
  • 3/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour

Filling

  • 8 large Granny Smith apples, peeled and sliced
  • 1 cup brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 1 cup red hots
  • 1/4 cup butter

Instructions

  1. Heat oven to 350 degrees F.

Topping

  1. Using an electric mixer on medium speed, beat butter with brown sugar in large bowl until creamy.
  2. Blend in egg and vanilla extract.
  3. Stir in rolled oats, flour and cinnamon thoroughly.

Filling

  1. In a large bowl, combine apple slices, brown sugar, cornstarch, cinnamon, allspice and red hots. Mix well. Pour into baking dish.
  2. Slice 1/4 cup butter stick into thin slices and place over apple mixture then top with topping mixture.Spread evenly over apples.
  3. Bake for one hour or until golden brown.
  4. Serve warm with ice cream or whipped cream.
