Impossible Buttermilk Pie

Ingredients

• 1 1/2 cups granulated sugar
• 1 cup buttermilk
• 1/2 cup Bisquick or Biscuit Baking Mix
• 1/3 cup butter, melted
• 1 teaspoon vanilla extract
• 3 eggs

Instructions

1. Heat oven to 350 degrees F. Grease a 9 inch pie plate.
2. Beat all ingredients until smooth, 30 seconds in blender on high or for 1 minute with hand beater.
3. Pour into plate.
4. Bake until knife inserted in center comes out clean, about 30 minutes.
5. Cool for 5 minutes.
6. Serve with mixed fresh fruit if desired.

Notes

High altitude (3500 to 6500 feet): Bake for 30 to 35 minutes.
