Mini Breakfast Pizzas

Minii Breakfast Pizzas

Prep: 20 min | Bake: 30 min | Yield: 4 to 6 servings

Ingredients

  • 8 Rhodes™ Dinner Rolls, thawed to room temperature
  • 8 eggs
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 tablespoons pizza sauce or salsa
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 3 green onions, chopped
  • 1 cup cubed, cooked ham
  • Italian seasoning, if desired

Instructions

  1. Spray counter lightly with nonstick cooking spray.
  2. Combine 2 rolls together and flatten into a 5 inch circle.
  3. Repeat with remaining rolls to make 4 mini pizza crusts.
  4. Place on a large sprayed baking sheet.
  5. Poke each one several times, with a fork, to prevent bubbles from forming.
  6. Bake at 350 degrees F for 10 to 15 minutes or until lightly browned.
  7. Remove from oven and set aside.
  8. In a small bowl, whisk eggs.
  9. Melt butter in a skillet and add eggs. Cook and stir over medium heat until eggs are softly set.
  10. Salt and pepper to taste.
  11. Spread each mini pizza crust with 1 tablespoon pizza sauce or salsa.
  12. Combine the cheeses together and sprinkle each pizza with 1 to 2 tablespoons cheese.
  13. Top with eggs, green onions, ham and any remaining cheese.
  14. Sprinkle with Italian seasoning if desired.
  15. Bake at 375 degrees F for 10 to 15 minutes or until cheese is melted.
