Black-Eyed Pea and Okra Gumbo

Black-Eyed Pea and Okra Gumbo recipe

Ingredients

  • 4 cups black-eyed peas
  • 1/2 pound salt pork or andouille, sliced
  • 3 tablespoons butter
  • 1 cup onions, chopped
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 clove garlic
  • 1/2 pound okra, cut up
  • 4 cups or 2 cans tomatoes
  • 2 cans Ro*Tel tomatoes
  • 1 pound popcorn shrimp*
  • Salt and pepper to taste

Instructions

  1. Soak peas overnight.
  2. Drain peas and add to a large pot. Add salt pork or andouille. Begin cooking over medium heat.
  3. Melt butter in a large skillet. Sauté onions, celery, bell pepper and garlic.
  4. Add vegetables and shrimp to the peas.
  5. Add both the regular canned tomatoes and the Ro*Tel, and simmer until done.

Notes

* Substitute with your favorite meat, thinly sliced chicken, round steak or ground beef
