Cajun Fried Chicken
Ingredients
- 4 boneless skinless chicken breast halves
- 1 1/2 cups cornflakes cereal
- 1/2 cup biscuit baking mix
- 2 teaspoons Cajun seasoning
- 1 cup water
- 3 tablespoons butter
Instructions
- Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap.
- Crush cereal and mix it with the biscuit mix and Cajun seasoning.
- Dip chicken into water, then coat with the dry mixture.
- Melt butter in a large nonstick skillet over medium heat.
- Cook chicken in butter for 10 to 15 minutes on each side until juice is no longer pink when centers of thickest pieces are cut.
