Cajun Fried Rice

Cajun Fried Rice is an old tradition among Cajuns. Cold rice is often left over from a meal and used for the next meal in this way.

Ingredients

  • 1/2 pound sausage or bacon
  • 4 or 5 cups cold cooked rice
  • 1/2 cup vegetable oil or bacon grease
  • 1 medium onion, chopped
  • Salt and pepper to taste
  • 2 large eggs
  • 3/4 cup chopped green onions
  • Bell pepper, chopped
  • Celery, chopped
  • Garlic and parsley (optional)

Instructions

  1. Fry sausage or bacon in oil until lightly brown. Add chopped onion; saute. Add rice and other ingredients except eggs and fry until crisp, stirring constantly.
  2. Add eggs and stir until eggs are cooked.
  3. Serve as main dish.
