Cajun Fried Rice
Cajun Fried Rice is an old tradition among Cajuns. Cold rice is often left over from a meal and used for the next meal in this way.
Ingredients
- 1/2 pound sausage or bacon
- 4 or 5 cups cold cooked rice
- 1/2 cup vegetable oil or bacon grease
- 1 medium onion, chopped
- Salt and pepper to taste
- 2 large eggs
- 3/4 cup chopped green onions
- Bell pepper, chopped
- Celery, chopped
- Garlic and parsley (optional)
Instructions
- Fry sausage or bacon in oil until lightly brown. Add chopped onion; saute. Add rice and other ingredients except eggs and fry until crisp, stirring constantly.
- Add eggs and stir until eggs are cooked.
- Serve as main dish.
