gumbo is a dish that can be made with many meats — or combinations of meats
— these meatballs could be created with almost any ground meat you desire. Rather
than beef and pork, perhaps throw in veal, bison, chicken or even shrimp!
Cajun Salmon Burgers with Lime Mayonnaise
— On the table

Cheesy Maple Bacon Cajun
Pulled Pork Sandwich
— You can
substitute your own homemade or store-bought smoky, spicy rub — you’ll need 3
to 4 tablespoons and add your favorite BBQ sauce to the pulled pork. You can
also use crisp-cooked maple bacon instead of making the maple glazed bacon,
and serve the sandwich with French fries instead of the smashed potatoes. If
you have leftovers, try pulled pork as a pizza topping, in a burrito, or stirred
into fried rice.
