Turkey Carcass Gumbo
Yield: 6 to 8 servings
Ingredients
- Turkey carcass
- Water
- 1/2 cup all-purpose flour
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 quarts turkey broth
- Salt and pepper, to taste
- Tabasco sauce
- 2 bay leaves
- 1 teaspoon dried basil
- 1 tablespoon dried parsley
- 2 cups chopped turkey
- 1 pound smoked sausage (cut bite-size)
- Green onion tops
Instructions
- After the turkey has been carved, put bones in plenty of water and boil slowly about 1 1/2 hours or until remaining meat falls off the bones.
- Make a roux of bacon drippings and flour. Add onions, garlic, bell pepper, dash of Tabasco sauce, bay leaves, basil and parsley. Cook for 1 hour.
- Add turkey and sausage and cook for about 15 minutes longer. Add green onions and cook a few minutes longer.
- Serve over hot, cooked rice.
