Salad and Salad Dressing Recipes
Strawberry Hearts of Palm Salad
Yield: 6 servings
Ingredients
- 2 tablespoons sherry vinegar
- 1 clove garlic, chopped
- 1/3 cup olive oil
- 1 (6 ounce) bag spring greens mix
- 2 cups baby arugula
- 1 (7.4 ounce) jar hearts of palm, drained and sliced (heart of a palm tree)
- 1/2 cup sliced strawberries
- 2 tablespoons pumpkin seeds
Instructions
- In bowl, whisk together vinegar and garlic. Whisk in oil.
- In bowl, combine greens, arugula, hearts of palm and strawberries. Drizzle over salad. Toss gently.
- Arrange salad on a platter.
- Sprinkle with pumpkin seeds.
