Sweet-Sour Cucumbers with Onions
Yield: 4 servings
Ingredients
- 2 cups thinly sliced, pared cucumbers
- 1/2 teaspoon salt
- 1 cup thinly sliced onions
- 1/4 cup vinegar
- 1 tablespoon water
- 1 tablespoon granulated sugar
- 1/2 teaspoon dill weed
- 1/4 teaspoon cracked black pepper
- Dash of ground red pepper
Instructions
- Place cucumber slices in a bowl. Sprinkle with salt and cover with cold water.
- Refrigerate for 30 minutes; drain well.
- Add onions. Combine vinegar, the 1 tablespoon water, sugar, dill weed, cracked black pepper and red pepper. Pour over cucumbers and onions; toss lightly.
- Chill for 1 hour or longer, tossing occasionally, before serving.
