Vegetable Salad Recipes

Ranch Potato Salad

2 pounds small red potatoes
1 cup prepared Ranch dressing
Chopped chives
1/2 cup sliced scallions
Paprika
Coarsely-ground black pepper

Boil potatoes with skin on. Cut slightly-cooled potatoes into slices or cubes.

In large bowl, combine potatoes, onions and dressing. Toss gently. Dust with paprika and pepper. Garnish with chives.

Serve warm or at room temperature.
