Southern Jalapeño Relish

I have to admit I have never eaten this stuff so I have NO idea what it is supposed to taste like! Here is the recipe that was given to me. This was found in a hole-in-the-wall joint somewhere down south by a buddy of mine who cooks BBQ. He came back and raved about it and said the owner gave him this recipe. It is left on the tables in little dishes (similar to salsa) and is used in a variety of ways. My buddy had it with his baked beans!

Ingredients

  • 1 cup jalapeño peppers, diced
  • 1 cup onion, minced
  • 6 tablespoons olive oil
  • 6 tablespoons cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt

Instructions

  1. Combine oil, vinegar, and spices and whisk well.
  2. Mix in with onions and jalapeños.
  3. Refrigerate overnight.
  4. Allow to warm up to room temperature before serving.
