Jiffy Corn Pudding

Jiffy Corn Pudding

Ingredients

  • 1 can cream-style corn
  • 1 can whole kernel corn
  • 8 ounces sour cream
  • 1 box Jiffy corn muffin mix
  • 1 egg
  • 4 tablespoons (1/2 stick) butter
  • 2 tablespoons granulated sugar
  • 2 cups shredded Cheddar cheese

Instructions

  1. Heat oven to 350 degrees F. Spray a 2 quart baking dish with cooking spray.
  2. Melt butter, add Jiffy corn muffin mix, egg, sour cream, sugar and the corn. Drain the can of niblets corn. Mix well until all of the ingredients are incorporated.
  3. Pour batter into the baking dish and bake for 45 minutes.
  4. Bake for 40 to 45 minutes.
  5. Sprinkle the Cheddar cheese over the top and return to oven for about 10 minutes or until cheese is melted and just beginning to brown.
