Sweet Potato Delight

Ingredients

Sweet Potatoes

• 3 cups cooked mashed sweet potatoes
• 2 eggs beaten
• 1 cup evaporated milk
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1/2 teaspoon salt
• 1 cup granulated sugar
• 1 teaspoon vanilla extract
• 1 stick butter, melted

Topping

• 1 cup crushed corn flakes
• 1/2 cup chopped pecans
• 1/4 cup melted butter
• 1/2 cup brown sugar

Instructions

Sweet Potatoes

1. Combine all ingredients and bake in buttered dish at 400 degrees F for 20 minutes.

Topping

1. Mix topping ingredients and spread on top.
2. Bake for an additional 15 minutes.
