Side Dish and Vegetable Recipes

Cheese Scalloped Potatoes and Carrots

2 cups boiling water
2 teaspoons salt
5 cups potatoes, sliced
1 1/2 cups chopped onion
2 cups carrots, sliced

Cook for 5 minutes and drain.

Cheese Sauce:
3 tablespoons butter, melted
2 tablespoons flour
1 teaspoon salt
Pepper, to taste
1 1/2 cups milk
1 cup grated Cheddar cheese

Heat oven to 375 degrees F.

Add flour and salt to margarine. Add pepper, milk and cheese. Alternate layers of vegetables and cheese sauce. Cover with 1/2 cup grated Cheddar cheese. Bake for 1 hour.
