Creamy Broccoli Soup
Yield: 2 quarts
Ingredients
- 2 tablespoons minced onion
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/4 teaspoons salt
- Salt and pepper
- 3 cups chicken broth
- 2 cups chopped broccoli
- 2 cups diced carrots
- 3 cups milk
Instructions
- Sauté onion in butter until tender. Stir in flour and salt. Add broth, broccoli and carrots. Heat over low heat for 25 minutes, stirring occasionally. DO NOT boil.
- Add salt and pepper.
