Tortilla Dinner
Ingredients
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1/4 teaspoon salt
- 1 egg
- 1 1/2 cups cold water
- 1 pound lean ground beef
- Tomatoes, chopped
- Onions, chopped
- Green bell pepper, chopped
- 1 pound cheese, grated
- Lettuce, thinly sliced
Instructions
- Combine flour, cornmeal, salt, egg and water in a large bowl, then beat.
- Spoon 3 cups of batter onto a moderately hot ungreased griddle, flattening with the bottom side of a spoon to make thin (1/4-inch) pancake. Turn tortilla when edges become dry, but not browned, and cook on other side. Set aside.
- To complete meal, brown ground beef.
- Reheat tortillas on a hot griddle with oil until lightly browned.
- Place a portion of tomato, onion, bell pepper, cheese and lettuce on top of each tortilla; roll and enjoy!
