Salmon Mexicana

Yield: 4 servings

Ingredients

  • 4 (6 ounce) salmon fillets
  • Juice from 1 lemon
  • 1 teaspoon seasoned salt
  • 1 large red onion, thinly sliced
  • 1 cup reduced fat sour cream
  • 12 cup salsa
  • 1/4 cup freshly chopped parsley

Instructions

  1. Heat oven to 400 degrees F.
  2. Spray baking sheet with with sides with cooking spray.
  3. Place salmon on baking sheet..
  4. Squeeze lemon juice over salmon.
  5. Sprinkle seasoned salt over salmon.
  6. Spread sour cream over salmon.
  7. Layer onions over sour cream (must be thin enough to melt into the sour cream).
  8. Bake for 30 minutes until fish is tender and flakes easily.
  9. Serve garnished with salsa and parsley.
