Southwestern Vegetable Soup
Ingredients
- 1 pound ground chuck or ground turkey
- 1 rounded teaspoon chopped garlic
- 2 tablespoons Mexican seasoning
- 1 large can picante V-8 juice, mild
- 1 can kidney beans, drained, rinsed
- 1 can green beans, drained
- 1 can whole kernel corn, drained
- 1 pint chopped tomatoes with juice or 2 cans chopped tomatoes and green chile
- 1 1/2 rounded teaspoons chili powder
- Salt and pepper to taste
Instructions
- Brown meat and garlic together.
- Add Mexican seasoning, salt and pepper.
- Add remaining ingredients except chili powder. After thoroughly mixing,
add chili powder to desired taste.
- Simmer for two hours, stirring occasionally.
