Leftover Turkey Recipes
Turkey Nacho Casserole
Ingredients
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 1 cup milk
- 3 cups chopped cooked turkey
- 1 (4 ounce) can chopped green chiles
- 1 cup frozen corn kernels
- 2 cups (about 7 ounces) crushed tortilla chips, divided
- 1/4 cup sliced green onions
- 2 cups shredded Cheddar cheese (or Cheddar-Monterey Jack blend)
- Paprika
- 1 cup salsa, warmed
Instructions
- In a large bowl, combine soup, milk, turkey, chiles and corn.
- In a lightly greased 2 quart casserole, sprinkle about 1/3 of the crushed chips. Pour half the turkey mixture over them. Sprinkle with half of the green onions and half of the cheese. Layer another 1/3 of the tortilla chips and top with the remaining turkey mixture, green onions and cheese. Top with the remaining chips. Sprinkle the top with paprika.
- Cover and microwave at full power for 5 minutes.
- Turn and microwave another 5 minutes. (Or bake in a preheated 350 degrees F oven for 30 to 40 minutes, until bubbly.)
- Let stand a few minutes before serving.
- Serve with warm salsa on the side.
