Eierochrli (Swiss Carnival Cakes)

Ingredients

  • 8 small eggs
  • 1/2 cup cream
  • Pinch of salt
  • 3 teaspoons confectioners' sugar
  • 1 ounce butter, melted
  • Sifted all-purpose flour, as needed

Instructions

  1. Mix ingredients for 15 minutes, adding enough sifted flour to make a dough; let stand for 15 minutes.
  2. Form into small apple size balls; roll as thin as possible, then pull carefully by hand to tissue paper thinness.
  3. Fry in butter in small pan; sprinkle at once with fine sugar.

Notes

These can be stored for weeks.
