Irish Potato Cake with Caramel Frosting
1 cup raisins
1 cup chopped nuts
2 cups flour, divided
1 cup butter
2 cups sugar
2 cups mashed potatoes
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup milk
2 teaspoons baking soda
1/2 cup cocoa
4 eggs, well beaten
Toss nuts and raisins with 1/2 cup of the flour. Cream butter and sugar. Add
potatoes, extracts and spices and mix well. Add milk. Combine remaining flour,
baking soda and cocoa; add to creamed mixture and add eggs. Add prepared nuts
and raisins. Mix well. Bake at 350 degrees F for 1 hour 30 minutes until done.
Caramel frosting:
2 cups brown sugar
1/2 cup cream
1/2 cup butter (1 stick)
1/2 teaspoon vanilla extract
Confectioners' sugar
Combine first 4 ingredients and boil 3 to 5 minutes. Add confectioners' sugar
slowly, beating until thick.
