Caramel Apple Empanadas

Caramel Apple Empanadas recipe

Ingredients

  • 2 (15 ounce) boxes refrigerated pie crusts (4 crusts total)
  • 1 (21 ounce) can apple pie filling
  • 11 ounces caramels, unwrapped
  • 4 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. Add the apple pie filling and caramels to a medium size saucepan over medium heat. Stir frequently until completely melted.
  2. Remove from heat and set aside.
  3. Unroll each pie crust and use a 4 inch round cookie cutter to cut out 5 circles per pie crust for 20 total.
  4. Place approximately 1 tablespoon of the filling into the middle of each dough round.
  5. Carefully fold over the circle and pinch the edges together to seal.
  6. In a microwave safe bowl, melt the butter and brush onto each empanada.
  7. In a small bowl, mix together the sugar and cinnamon and sprinkle over each empanada.
  8. In batches, place the empanadas into the basket of an air fryer and cook for 10 minutes at 330 degrees F. Don't overcrowd. Watch closely so that they don't burn.
  9. Repeat with remaining batches.

Notes

You can bake these in a 350 degrees F preheated oven for 12 to 15 minutes or until golden brown.
