Baked Brie with Peaches and Almonds


  • 1 wheel Brie cheese, about 8 ounces
  • 3 medium-size fresh Georgia peaches, peeled and diced
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup slivered almonds, toasted


  1. To toast the almond slivers, heat the oven to 350 degrees F. Place the almonds in a single layer in a jelly roll pan, and place in the heated oven. Bake for 8-10 minutes, stirring a few times, until fragrant and toasted.
  2. Let almonds cool and keep oven at 350 degrees F.
  3. Place Brie wheel in a small casserole dish or baking pan.
  4. In a small bowl, combine peaches, brown sugar, and cinnamon. Spread mixture over Brie. Sprinkle with almonds.
  5. Bake in the preheated oven for about 10-12 minutes, or until peach mixture is just starting to bubble and cheese is softened throughout.
  6. Serve warm with bread and/or crackers.

Yield: 8 to 10 appetizer servings
