Marinated Mushrooms
Ingredients
- 1 pound fresh mushrooms
- 6 tablespoons olive oil
- 3/4 cup dry white wine
- 1 1/2 teaspoons salt
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped
- 2 tablespoons chopped onion
- 3 tablespoons lemon juice
Instructions
- Place mushrooms in a glass or earthenware bowl.
- Combine remaining ingredients in a saucepan and simmer for 15 minutes.
- Remove from heat and pour over mushrooms.
- Cover and refrigerate for several hours or overnight.
