Shrimp on Crackers
Serves 20.
Ingredients
- 1 cup mayonnaise
- 1/2 cup parsley, chopped very fine
- 1/2 cup finely chopped scallions
- 2 tablespoons horseradish
- 1 (5 1/4 ounce) jar Zatarain's mustard
- Dash of Tabasco or red pepper sauce
- Lemon juice, to taste
- 2 pounds medium shrimp, boiled, de-veined
Instructions
- Mix all ingredients except the shrimp.
- Fold shrimp in gently to prevent breaking.
- Marinate for 24 hours.
- Serve on Ritz crackers, one shrimp to a cracker.
