Southwestern Shrimp Cocktail

Serves 3 to 4.

Ingredients

  • 1 pound large shrimp, peeled and de-veined
  • 1 1/2 cups salsa, chilled
  • 1 avocado, peeled and sliced
  • Lettuce, chopped
  • Cilantro
  • Lemon wedges

Instructions

  1. Place the shrimp in boiling water. Cook just until the water returns to a boil.
  2. Chill fully.
  3. Place the lettuce in a small shallow bowl.
  4. Spoon 1/4 of the salsa in the middle.
  5. Stick avocado slices in the salsa.
  6. Place the shrimp around the salsa.
  7. Garnish with lemon wedges and cilantro sprigs.
