Mexican Chi-Waw-Waw

Ingredients

  • 8 ounces chopped black olives, drained
  • 8 ounces chopped pimentos, drained
  • 8 ounces chopped mushrooms, drained
  • 4 tomatoes, chopped
  • 8 chopped scallions, tops and all
  • 3 (8 ounce) cans chopped green chiles, drained
  • 4 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 3 teaspoons salt

Instructions

  1. Mix all ingredients well.
  2. Serve with corn chips.

Notes

You can also use Mexican Chi-Waw-Waw over a lettuce salad or over an avocado.

This freezes well.
