Mushroom Delights

Yield: 20 to 30 mushrooms

Ingredients

  • 1 pound large mushrooms (2 to 3 inches wide)
  • 1 pound hot Italian bulk sausage
  • 1 small bunch scallions
  • 8 ounces cream cheese

Instructions

  1. Pull stems from mushrooms and discard or save for another use.
  2. In a skillet, cook sausage until done; drain and crumble. Return to pan.
  3. Chop scallions. Add scallions to sausage in skillet.
  4. Stir in the cream cheese over low heat until cheese melts. If mixture is too stiff, add a little milk.
  5. Stuff mushroom centers with mixture. Place on cookie sheet.
  6. Heat oven to 350 degrees F. Heat mushrooms for 20 minutes (or microwave for 4 minutes on HIGH on a microwave-safe pie plate).
