Skordalia (Greek)
Ingredients
- 4 thick slices bread, soaked in water
- 1 1/2 cups mashed cooked potatoes
- 3 cloves garlic
- 1/2 cup walnuts
- 3/4 cup olive oil
- 1/3 cup fresh lemon juice
- 1/2 teaspoon salt
Instructions
- Squeeze bread to remove excess water. Place bread, potatoes, garlic and walnuts in a food processor. Whirl until smooth and creamy.
- With machine running, add oil in slow, steady stream through feed tube until thoroughly incorporated.
- Blend in lemon juice and salt.
- Serve in bowl with vegetables or triangles of pita bread for dipping.
