Smoked Catfish Spread

Ingredients

  • 8 ounces smoked catfish fillet, broken into small pieces
  • 4 ounces cream cheese
  • 2 tablespoons unsalted butter
  • 1 to 1 1/2 tablespoons milk
  • 2 teaspoons minced onion
  • 1 1/2 teaspoons brandy
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon hot pepper sauce
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place all ingredients in the bowl of a food processor or mixer, and mix well.
  2. Pack the mixture into a small serving bowl, and refrigerate, covered, for at least 30 minutes and as long as 48 hours.
  3. Serve the spread with crackers or bread.
