Gazpacho Smoothie


  • 1/2 cup peeled and chopped cucumbers
  • 1/2 cups chopped tomatoes
  • 1 shallot, pureed
  • 1/4 cup chopped bell pepper
  • 1/4 cup V-8 juice
  • 1/2 cup carrot juice
  • 1/2 cup pineapple yogurt or sour cream


  1. In a blender place cucumbers, tomatoes, shallow and bell pepper and blend at high speed.
  2. Add V-8 juice, carrot juice and yogurt. Blend with vegetables until smooth.
