- 1/2 cup peeled and chopped cucumbers
- 1/2 cups chopped tomatoes
- 1 shallot, pureed
- 1/4 cup chopped bell pepper
- 1/4 cup V-8 juice
- 1/2 cup carrot juice
- 1/2 cup pineapple yogurt or sour cream
- In a blender place cucumbers, tomatoes, shallow and bell pepper and blend at high speed.
- Add V-8 juice, carrot juice and yogurt. Blend with vegetables until smooth.
